I serve this salad in portions, so I divide all the ingredients into portions. Place cucumbers and pieces of squid, and a finely chopped egg in the middle of the plate. Boiled squid are cut into even thin half rings.
- Wash the chicken eggs, place in cold salted water (half a tablespoon of salt in a small saucepan), boil and cook for 10 minutes. Then soak the hard-boiled eggs in cold running water for at least 4 minutes so that the shells come off especially easily. Cut the peeled eggs into cubes.
- Chop the washed cucumber into strips.
- Cut the peeled onion into thin half rings.
- Combine all ingredients, season with lightly salted sour cream mixed with a moderate amount of ground pepper, and stir.
- Sprinkle the finished salad with finely chopped herbs.

- 1 small beet;
- 3 eggs;
- 100 g hard cheese;
- 3 cloves of garlic;
- 3 tablespoons of mayonnaise;
- salt to taste.
Preparation
Beetroot, eggs and squid. Cut the last two ingredients into small cubes. Finely chop the garlic with a knife or pass through a press. Grate the cheese and beets on a medium grater. Combine all this in one bowl, add salt and season with mayonnaise.

In a small bowl, combine lemon juice, vinegar, olive oil, chopped garlic, salt and pepper. Pour this over the chopped herbs and peeled, sliced red onion. Let it brew.
Cut the boiled squid and olives into rings. Cut cherry tomatoes in half, regular ones into cubes. Also cut the feta cheese. Combine these ingredients with the dressing, mix well and let sit for a little while.

Prepare the dressing: grind the garlic through a press into a paste with chili peppers. When working with the latter, be careful: hot peppers can cause burns on the skin. Add the juice of half a lemon, sugar and salt. Stir and let the dressing sit for 10-15 minutes.
At this time, boil and cut the squid into rings, chop the cabbage, peel and cut the onion into half rings, and chop the ginger. If you don't have fresh ginger root, use ground ginger.
Mix all the ingredients and pour over the previously prepared dressing.
Squid salad is tasty, healthy, low in calories and very simple. Squids themselves are a specific product, but those who claim that they are tasteless simply do not know how to cook them! The secret here is simple: the squid carcass is cooked in boiling water for no more than three minutes. If you cook longer, they will become tough and unsuitable for consumption. The remaining components of our salad with squid and cucumber, as they say, are unpretentious. Chop the cucumbers and herbs the way you like. But onions we need it to create a “crispy” effect in the salad. It’s easy to remove the bitterness of the “grandfather dressed in a hundred fur coats”: chop it into pieces of the required size and pour boiling water over it. As a rule, 15 minutes is enough for all the bitterness to “evaporate”.

- Medium squid 3 pieces (about 300-400g)
- Onion – 1 medium head
- Cucumbers – 3-4 pieces medium

- Greens to taste (0.5 bunch for gourmets is enough)
