I bring to your attention a recipe for a snack pie with cheese and fried onions. The bite of the pie is reminiscent of a classic onion pie.
The first step is to prepare the dough.
To do this, I will take margarine or butter. Margarine or butter should be at room temperature.
I add two tablespoons of sour cream to the butter.
I like my snack pies to have a slightly sweet dough, so along with a pinch of salt, I'll add one tablespoon of sugar.
Next I’ll add half a tablespoon of baking soda. Theoretically, sour sour cream should extinguish the soda. From my experience I know that it is better to extinguish the soda.
It's time to add flour. I'll need a little more than a glass.
The dough should not be too dense. Place the finished ball of dough in the refrigerator for 20-30 minutes.
In the meantime, I'll prepare the filling. To do this, I will prepare one processed cheese, two raw eggs and two small onions.
The onion needs to be peeled and cut into small cubes. I fry the onion in vegetable oil.
I break the eggs into a bowl.
I grate the cheese on a fine grater and add it to slightly beaten eggs.
Fry the onion until golden brown and add it to the filling.
The dough must be divided into two equal parts. I roll one out and place it on a baking sheet. I don’t grease the baking sheet because the dough is quite greasy.
I put the filling on top.
I also roll out the remaining half of the dough and cover the filling. I brush the top with the remaining filling.
This delicious option unsweetened pastries has been known in our family since time immemorial as a snack pie. The signature snack pie with cheese was baked for the holidays and just like that, because everyone really liked it.
Then the recipe, printed - as I remember now - on a yellowed piece of paper from some kind of printout, was lost, and for a long time no one could remember exactly how the pie dough was made. But I remembered the recipe for the cheese and onion filling well, and we invented a simplified version - we baked a snack pie with processed cheese on a crust made from simple shortbread or even from store-bought puff pastry.
I don’t recommend the second option, since it’s ready puff pastry the cake turns out hard. But the shortbread is delicious, crumbly. But still, the original shortbread recipe was different! And how happy I was when Katya, a reader of the site, shared with me the recipe for her family’s signature onion pie, which I recognized as a familiar snack! Ingredients:
Dough:
- 3 cups topped flour;
- 200-250 g sour cream;
- 200 g butter margarine or butter;
- 0.5 teaspoon of soda;
- 0.5 tablespoon of vinegar or lemon juice.
Cheese and onion filling:
We took it like this:
- 4 processed cheese;
- 4 eggs;
- 4 large onions.
- Sunflower oil;
- Salt.
But this set can be varied, both smaller and larger. For example, you can take 3 or 5 cheesecakes, you can add a little hard cheese. I also took 3 eggs, and according to Katya’s version, you can generally take 1-1.5 kg. The more, the tastier!

Let's prepare the dough! Cut the softened butter into pieces into a bowl, pour in sour cream, pour in the flour, add baking soda to the flour, simmer and mix everything.
The result is a soft dough.
For the filling: cut the onion into thin half rings and, stirring, fry over sunflower oil until soft and light golden brown. If at first it seems to you that there is a lot of onion, do not worry, during frying it significantly decreases in volume.

While the onion is cooling, grate the cheese on a coarse grater. Add eggs, cooled onions, salt and mix. The filling for the snack pie is ready!
Grease a baking sheet with oil and spread the dough over it with your hands, separating the pieces and kneading them with your hands. At the edges we make a reserve for the sides.
Spread the filling over the crust and fold in the sides.
Since childhood, I have had a vague impression that our snack pie was closed - having formed the bottom crust and sides, we closed the top with “patches” from the rest of the dough. Only for this you need to make one and a half or double portions of dough.
Place the pie in the oven, preheated to 180 C, and bake until the edges are golden brown and the filling is golden brown.
Let the finished snack pie with cheese cool (since it is very tiny when hot), then cut into square pieces and serve!

Remove the processed cheese from the package and chop using a grater with medium holes.

Peel the onions and cut into small cubes. Heat a frying pan with vegetable oil in it. Fry the onion pieces until pale golden brown and place in a deep plate. Wait until the onions have cooled to room temperature before continuing to cook.

When the pieces of fried onion have cooled, add grated processed cheese to them, and also break two chicken eggs into the mixture. Carefully crack the third and separate the yolk from the white, add the latter to the filling, and pour the rest into a separate bowl and set aside for now. Mix all the ingredients for the filling together, adding seasonings to taste.

Take the dough out of the refrigerator and mentally divide it into three parts. Pinch off about two-thirds and roll into a layer that is suitable in volume and size for the shape you have chosen. Place the dough on a baking sheet and pour the filling onto it, smoothing with a spatula or tablespoon. Roll out the remaining dough using a rolling pin and place it on top, slightly turning the edges. Remaining egg yolk Grease the top and edges of the pie, but do not get carried away and do not miss anything so that you do not end up with black or pale spots that stand out. Important: Roll out the dough on a floured countertop; sprinkle your rolling pin and hands with flour.
Step 6: bake the snack pie.

Preheat oven to 200 degrees Celsius and place the formed pie in it. Bake this dish needed within 30 minutes. The finished snack pie will be covered golden brown crust. Remove it after the specified time and leave it to cool to room temperature, and then proceed to serve it.

A snack pie filled with onions and melted cheese is very good for an afternoon snack, because it is filling and incredibly tasty. Pour flour into a large deep container. We take the butter or margarine out of the freezer and periodically roll it in flour and grate it on a coarse grater. Add salt, then rub the butter and flour with your hands into a homogeneous crumb.
Make a well in the flour, pour in sour cream and soda slaked with vinegar. Mix.

Using your hands, simply gather the dough into a ball, but do not knead. Wrap in cling film and refrigerate for at least 2 hours, preferably overnight.
Cut the onion into thin half rings and pour into a heated frying pan with vegetable oil. Simmer over low heat until soft.
Beat eggs with salt (0.25-0.5 tsp) with a fork.
Add chopped frozen, dry or fresh herbs.
When the onion becomes soft, salt it (0.5-1 tsp) and pepper. Cook for another 3-5 minutes.
Mix hot onion with cheese, grated on a coarse grater. Taste and adjust to taste if necessary.
Then combine the cooled cheese and onion mixture with the eggs. The onion filling for the pie is ready.
We take the dough out of the refrigerator, visually divide it into 3 parts and cut off one piece. Roll out a large lump (2/3 of the dough) on a floured surface into a thin layer (0.3 mm). Grease a mold with a diameter of 26.5 cm with oil, transfer the dough there and level it, forming sides.
Pour the filling into the mold.
Roll out the remaining dough and cover the filling.
We secure the edges and remove the protruding parts of the dough.
Place the onion pie in a hot oven. Bake at a temperature of 160-170 degrees for 25-30 minutes (check readiness with a toothpick - it should be dry). 4-5 minutes before readiness, brush the onion pie with cheese with beaten egg.
Remove the shortbread pie with onions from the oven and leave to cool.
Pie with onions and melted cheese - this is simple, but very tasty dish originally from France. To prepare it you will need a minimum set of products that are present in any kitchen. The main ingredient, onions, is not noticeable at all in the dish. Therefore, the pie can be safely called not only tasty, but also healthy.
This original snack pie with onions and melted cheese will especially appeal to male representatives. However, this does not mean that women will not like him. Another interesting thing is that although the pie is quite tasty when warm, it becomes simply divine when cold, especially with a cup of piping hot coffee. A piece of such a pie can become a completely satisfying breakfast or afternoon snack, and besides, it is easy and convenient to take with you as a snack.
Ingredients
- For the test:
- Creamy margarine – 125 g;
- Wheat flour - about 1 tbsp. (plus flour for dusting the table when kneading the dough);
- Sour cream or mayonnaise - 3-4 tbsp. l.;
- Salt - a pinch;
- Soda – 0.5 tsp;
- Table vinegar - 1 tbsp. l.
- For filling:
- Processed cheese (100 g each) – 2 pcs.;
- Large onions – 2 pcs.;
- Raw eggs – 2 pcs.;
- Ground black pepper and salt - to taste;
- Vegetable oil - for greasing the pan and frying the onions.

Preparation
Sift flour mixed with salt through a wooden sieve and combine with margarine, previously kept in the freezer and grated on a coarse grater.
Using your hands, knead the combined ingredients into flour crumbs.
Add soda and sour cream to the bowl with the crumbs.
Mix the mixture thoroughly with a spoon, and then sprinkle the table with flour and knead the dough with your hands into a soft and pliable dough. Place it in the refrigerator for about 1 hour, remembering to cover it with a towel to prevent it from drying out.
Peel both onions, cut into thin half rings and sauté in vegetable oil. Set the pan aside until the onions cool completely.
Cut processed cheese into small cubes and combine with raw eggs. You can pre-freeze the cheese curds and then grate them on a coarse grater.
Add completely cooled fried onions, salt and black pepper to taste to the filling. To stir thoroughly.
Using a rolling pin, roll out most of the dough (about 2/3) into a layer at the bottom of a pan greased with vegetable oil, forming small sides on the sides.
Place the filling on top, spreading evenly over the entire surface.
Roll out the rest of the dough thinly and cover the filling with the resulting layer, or tear the dough into small pieces with your hands and randomly scatter them over the filling.
Bake the pie at 200 degrees for about 30 minutes until golden brown.
Once cooled, shake out of the mold and cut into portions.
Adviсe:
- If you want to make the snack pie with onions and melted cheese more spicy and piquant, then add a little chopped chili pepper or garlic to the filling.
- Onions can be replaced with shallots or green onions. Shallots are sweeter, so the taste and smell of baked goods will not be as strong. If you add green onions, the dish should be consumed immediately after cooking, because baked goods with greens cannot be stored for a long time.
- Processed cheese can be replaced with sausage cheese.
- You can decorate the product using figured edgings, which are made using a fork, braids or ropes of dough. For decoration, use a fork to leave an imprint of the cutlery around the edges. If you plan to decorate with braids, then weave a braid from 3 layers of dough and lay it along the sides. Decorating materials are laid out on raw dough and together with the baked goods go into the oven.
