Divide the dough into two unequal parts, putting the smaller one in the refrigerator. Grease a baking tray or mold generously with oil. Roll out most of the dough and lay it out, forming sides. Lay out the filling.
Roll out a flat cake from a smaller piece of dough, cut out hearts or flowers with a cookie cutter. Place the cut out “cookies” on top of the filling quite tightly, but without overlapping. Bake for 50-60 minutes.

kefir at room temperature - a glass;
butter – 125 gr.;
yolk;
sugar - a glass (a little less);
baking powder - one and a half teaspoons;
flour – 2 cups;
three apples.
Melt the butter, mix with kefir, sugar, yolk. Add baking powder and flour. Knead. Kefir dough is not as thick as classic shortbread, but not liquid either. It should not flow; it should be spooned out.
Lay out half the dough, then thin slices of apples, sprinkled with sugar and cinnamon (optional). The remaining dough is carefully placed on top. Bake for about 40 minutes.
Lenten dessertThere is a version of the pie that can be prepared during Lent. To prepare a Lenten dessert, you need to replace the butter with vegetable oil.
Required:
- a glass of semolina and flour;
- half a glass of sugar, if you like sweet desserts, you can add a full glass;
- baking powder - one sachet (15 g);
- odorless vegetable oil - half a glass;
- vanillin or cinnamon;
- juicy apples, at least 800 grams, preferably 1 kg.
You need to mix all the dry ingredients, that is, flour, semolina, baking powder, vanillin or cinnamon. If you plan to make a pie with nuts, then they need to be peeled, chopped and added to the dry mixture. Add raisins or candied fruits to the filling.
Supplements can be added if desired. Pie with nuts turns out very tasty. You can use raisins or candied fruits.
Peel the apples and grate them to prepare Korean carrots. The fruit must be juicy, otherwise the pie will not work. If the apples are unsweetened, you can add sugar to them.
Try this wonderful apple pie! Thin, crumbly shortbread dough, and in the middle, between two thin layers of golden crust, there is a lot of juicy, tender, aromatic apple filling!
The pie is very, very apple: there is much less dough than filling, a thin layer on top and bottom, and what a filling!.. During baking, pieces of apples turn into the most delicate applesauce, fragrant throughout the kitchen with cinnamon, rum and citrus. You have to smell and try this!
This is an extraordinary recipe, the most delicious of the shortbread pies with apples that I have tried: and the very first one, with a “fan” of apple slices; and the second, with meringue; and even a third one, with cottage cheese. And I found this pie on colorful cards with recipes, it looks like an appendix to some magazine... There it was served as an American charlotte - just a recipe for our collection for our simple sponge cake, and for the exquisite Spanish charlotte that we tried recently, and an unusual Polish one, which we will also bake soon!
This recipe seemed to me very similar to a vegetable pie made from shortcrust pastry, not in taste, but in the principle of execution: two thin cake layers, between them - a lot of filling, and on top - decorations! You will enjoy both decorating the pie and eating it :)

Ingredients:For a mold of 22-24 cm, smaller is better, because... It will be easier to roll out:
For shortcrust pastry:
- 250 g flour;
- 125 g butter;
- 1 large yolk;
- 2 tablespoons sugar;
- 3 tablespoons of cold milk;
- A pinch of salt.
For the apple filling:
- 600-700 g of sour apples (I baked with Snow Calvin, took a little more than 800 g of unpeeled apples, after peeling I got the right amount. You can take less - 50-600 grams, since 700 g of apples, even instead of the 750 indicated in the original recipe, they need to be compacted tightly, but after baking the filling decreases in volume);
- 3 tablespoons sugar;
- 1 teaspoon cinnamon (without top);
- 2 tablespoons of rum (or cognac, it adds flavor);
- Juice and zest of half a lemon;
- 1 heaping tablespoon of semolina.
First, let's prepare the dough, since it needs to be cooled in the refrigerator for half an hour. Sift the flour into a bowl, cut the soft butter into pieces, add sugar and yolk, add salt, and knead the soft dough. If the dough does not stick together or crumbles, add cold milk 1 spoon at a time and continue kneading until it reaches an elastic consistency.
You don’t need to knead the shortbread dough for a long time; if it sticks together, it’s enough for it to turn out not hard, but crumbly.
Roll it into a bun, put it in a bag and put it in the refrigerator for 30 minutes. This is necessary so that the dough rolls out easily: when the oil included in its composition cools, the dough sticks less to the table and rolling pin.
While the dough is in the refrigerator, let's make the apple filling. Wash the apples, cut them into halves or quarters, peel them down to the cores and peel them, and then cut them into one and a half to two centimeter cubes.
Pour lemon juice over the apples, add cinnamon, sugar, semolina (it is needed to absorb moisture from the filling), cognac, lemon zest and mix. The filling is ready.
Place a circle of parchment on the bottom of the mold and grease the walls with vegetable oil. Turn on the oven to warm up to 200C. And it’s just time to take the dough out of the refrigerator. We divide it into two parts, approximately 2/3 and 1/3.
Sprinkle the table with flour and roll most of it into a circle, 2-3 mm thick, 2-3 cm larger in diameter than the mold.
We cut the cake to size, it is convenient to do this by placing the mold on it.
Carefully wrap the cake around the rolling pin and transfer it to the pan.
Unwind and lay flat, forming a bottom cake with high (2-3 cm) sides.
Pour the filling onto it and distribute evenly. And don’t think that there are a lot of apples :)
Roll out a smaller part of the dough and cut out a circle from it equal to the diameter of the mold. Also, using a rocking chair, transfer it to the pie and cover it on top. Lightly brushing the edges of the bottom cake with water, we mold the top and bottom together - this turned out to be the most difficult moment, I used the handle of a spoon to pry up the bottom edge :) But the difficulties are over, and we can move on to the most exciting part - decorating the pie!
From scraps of dough we make leaves, apples, flowers and, brushing with water, place them on the top crust. Be sure to make several holes for steam to escape - from wet apples, but during the heat in the oven a lot of steam is formed, and you need to give it a way out, otherwise the cake may crack.
Place the pie in the oven and bake for 50 minutes to 1 hour, at 200-180C, this varies for different ovens. For example, I baked it for 1 hour, first at 200C, then I reduced it to 170-180C and moved it from the middle level to the top, and placed a ladle of water on the bottom of the oven so that the bottom did not burn, then I greased the pie with milk and sprinkled with sugar, and increased the heat again to 200C-220C until it browned.
What a golden, beautiful pie! And how fragrant!
Let it cool a little in the mold so that the delicate cakes do not crumble, and transfer it to a plate.
Carefully cut with a sharp knife - the dough is very tiny, and the filling is super-tender.
By the way, the pie is very tasty while still warm, and American charlotte is served with whipped cream or ice cream! But it’s quite possible with tea, especially when it’s cool outside.
